I was inspired by my latest reblog and made sweet potato fries with guacamole and yammmm so good. Tomorrow I think I’m going to make sweet potato and portobello mushroom burgers with guacamole or avo with onions and peppers, with roasted carrots on the side. I’m curious about roasting them with coconut sugar. I used to eat sweet brown sugar carrots as a kid or something like that and I’m curious about it. I also bought some stuff for vegan bean and rice enchiladas. I bought uncooked beans and rice and I’m excited/curious/scared about it. I can finally use my rice cooker! I am also going try to make cauliflower “wings” soon.
Tomorrow I get my hair chopped to below my shoulders (it’s past my bellow button right now) and I’m excited and scared. Then Friday my boyfriend returns after being gone for a month. I can’t wait to experiment dinners with him. Kinda. Our schedules are terrible but we can try.
