3-minute Healthy Nachos:

Buy organic or blue corn chips and layer your chips with canned slice olives, canned kidney beans, canned sliced jalapenos and grate a little organic cheddar over everything. (Buy organic when you can afford it. It’s better for the planet.) Use any veggies you like, really. Pop in the microwave for around a minute, and garnish with salsa.

This was in the queue but I thought I’d post it now since this is what I am having for dinner. I don’t think I will have all of those ingredients and the chips aren’t organic or blue corn but we’re adding tofu meat.
