Really want to share this recipe with you all for these vegan Cocoa Pancakes that I made the other day! They were delicious. I put white chocolate peanut butter on them as well. So delicious.
Ingredients:
- 1 cup non-dairy milk
- 1 tsp apple cider vinegar
- 1 cup light spelt flour (or whole wheat, all purpose etc)
- 2 tsp baking powder
- ¼ cup + 2 tbsp cacao/cocoa powder
- 1/2 tsp cinnamon
- pinch of salt
- 3 tbsp maple syrup (or agave nectar) plus extra for serving
- 1/4 cup liquid coconut oil (or other oil)
- 1.5 tsp vanilla extract
Directions:
- Mix the non-dairy milk and apple cider vinegar in a small bowl and set aside to curdle, about 5 minutes.
- Mix the flour, baking powder, cocoa powder, cinnamon and salt together in a large bowl until combined. Add the curdled milk, maple syrup, coconut oil and vanilla. Mix with a wooden spoon until just combined. It should be a tad loose-seeming.
- Heat a large, non-stick pan over medium-low heat. Drop ¼ cup measures of the batter into the pan (not too many at a time!). When bubbles start to peak through the surface and you see a bit of light browning/crisping up on the underside, flip the pancakes over carefully, about 1-2 minutes. Repeat for the other side, remove from the pan and set aside on a covered plate to keep warm.
Hiiii peeps. I haven’t been on my laptop in nearly two weeks, letting my messages slowly pile up (thankfully I don’t get too many) and my queue has ran out. As always, I’m happy to not be spending so much time online. I mostly came on to update with a pancake recipe I made the other day. If you follow me on instagram, you’ve already seen what they looked like. I’m going to go clean my lunch mess in the kitchen and then work on getting that recipe up, add a bit to my queue, answer my messages, then off again so read.
Today’s lunch. BLTA - Whole grain, veggie bacon, spinach, tomato, and avocado. With grapes, strawberries, an orange, a kiwi, and orange carrot mango juice. So good.
From a few days ago. Van’s whole grain gf/vegan waffles with dark chocolate and white chocolate peanut butter, organic raw blue agave syrup, fruits, glass of almond milk, and a smoothie made of strawberry orange banana juice, frozen strawberries, frozen mango, and a fresh banana.
Dinner tonight is quinoa pasta shells with tomato basil marinara, 1/4th of an avocado, and about half of a zucchini sauteed in Earth balance (vegan) natural spreads (out of all oils) with some spices. And we made tea but it’s hawwt.
Dessert is going to be dairy free brownies with coconut milk ice cream and dairy free chocolate sauce. And banana slices for me.
Best friend is staying over tonight so we made dinner and it’s her fault we’re making a real nice dessert haha. Yum.
My grocery shopping lately has mostly been clif/luna bars, almond milk, bananas, cereal, and… I don’t even know what. So today I decided to stock up on da goods. Lots of strawberries, juice, almond milk, bananas, cantaloupe, zucchini, spinach, bread, lots of tomatoes, grapes, frozen fruits, quinoa, pasta sauce, brownie mix, dairy free chocolate syrup, coconut milk ice cream, and possibly a few other things I can’t remember.
Half of my lunch from about 2 weeks ago. Tofurkey sandwich on whole grain with soy cheese, mustard, spinach and tomato.
Late breakfast from today. Van’s gf/vegan whole grain waffles, white chocolate and dark chocolate peanut butter, organic maple blue agave syrup, and regular almond milk. Also a smoothie of almond milk, a banana, fresh spinach, frozen strawberries, frozen mango, and probiotics powder.

Ah online for the first time in days. I’ve been away and busy and such and don’t feel the need so much to come online which is good. Today I went to San Diego and went to an organic, raw vegan place and got a pizza and it was ehhh pretty good but definitely not enough. At all. It was tiny and not pizza-y. I could never go raw but lets just say it was a good snack to keep me until I ate a monster burrito for dinner. Now I’m gonna catch up on the few messages I have. I am also a few followers away from 5k and I’m so so grateful and happy that you all follow me! I love you all. I was thinking of maybe making a video and answering some questions about anything, my veggi-versary is coming up soon too which is cool. But I don’t think I’d get enough questions to make a good vid so I wont make one.
Vegan chocolate fudge brownies! This is the recipe we used and I used apple sauce instead of banana, almond milk instead of water, and added the whole bag of chocolate chips because yolo. SO GOOD. I will take a photo of em tomorrow in the light. But downed with a glass of cold almond milk, ugh so good. So I wanna share the recipe (:
My best friend and I are making homemade vegan brownies ohhhh yeahhh. They’re kinda deep dish and on 300F and been in 30 minutes and aren’t done yet. Haha. Gonna get chocolate wasted y’all.
I haven’t been on my laptop in days and my queue is out so thought I would update from my phone! Here’s a uh… snack I suppose. Van’s dairy and gluten free french toast, maple blue agave syrup, tea cookies, and Irish breakfast black tea with coconut milk, raw sugar, and raw blue agave syrup. I accidentally bought coconut milk instead of almond, somehow. This was kinda too much sweets for me though.
We’ve been having a lot of storms this summer and it’s really odd. But I love it. I have been going hiking a lot more and this weather gives me more of an excuse to stay cuddled in bed in a sweater and socks and drink tea and read all day. It’s great.
