Fresh and Easy Fruit and Spinach Salad: Spinach, grapes, apples, almond slices, dried cranberries, with raspberry pomegranate vinaigrette. I threw on slices of a Morning Star vegetarian chicken patty for protein.
Yesterdays lunch…. last nights dinner… today’s lunch. My mom bought me this HUGE salad yesterday and it was also ‘best by’ yesterday, I figured I’d eat the rest today for lunch. It’s probably 2 times more than in this photo. And instead of a veggie patty, I used a fungi patty because I’m out of veggie patties. Still good though, of course.
I want to eat this right. now.
I’m starting to miss chicken… uh oh.
Quinoa Salad
Serves: 4-6
2 cups cooked quinoa
1 tsp cumin seeds
2 Tbsp fresh lime juice
1 Tbsp extra-virgin olive oil
Freshly ground black pepper
1(15 oz) can black beans, drained and rinsed
1 small red bell pepper, finely diced
½ cup finely chopped cilantro
1 small onion, diced
In a small skillet, toast the cumin seeds over high heat, shaking the pan, until fragrant (about 2 minutes).
